Wait, so when did Ed and Al meet Izumi?

It has to be after Trisha's death, as a Red Shirt mentioned that they were orphans, but it had to have happened before they comitted the Taboo, since Al isn't in his armour form. But I thought they comitted the Taboo right after their mother died?

after their mom died, they trained for years before trying to revive her. They were still beginners in alchemy, so they knew better than to jump into something as complicated as that. Iirc they met Izumi at a campfire or some gathering somewhere and begged her for help, and because of her sympathy for children she agreed to train them.

^This.  They were only able to perform the transmutation because of Izumi's teaching.

She just taught them alchemy, not specifically human transmutation though. She did not want them to do it, and if she found out about it she probably would have stopped teaching them

Just wanted to point out they met Izumi witnessing her save a town from a giant flood using alchemy.
